Yes, ‘Notting Hill’ is great. I love ‘She’ as well as ‘Ain’t no sunshine’ very much.
Till date, I never saw a better compilation than ‘Great Expectations’, though… ‘Pretty Woman’ comes close…

Hmm, how does one keep this short? By not straining one’s memory, that’s how :-p !!
So just a few off the top of my head and not mentioned in the earlier comments :
Runaway bride : The movie opens with U2’s epic ‘Still haven’t found ….’, and has many great tracks.
The Jungle Book: ‘Bear Necessities’ has got to be one of the most upbeat songs ever – and i guess Walt Disney soundtracks often have nice numbers.
James Bond compilations? While i can’t single out any one Bond movie OST, there’ve been some memorable songs and instrumentals down the years – a carefully chosen compilation can be quite worthwhile.
Forrest Gump: Great selection of ‘representative’ music from the 60s.
Elvis movies: He sings in them, duh :-p !!

Btw I DID like the Bonds compilation….but then I am a HUGE Bond fan!!
I don’t remember if people mentioned Love Actually and City of Angels..
and Frida and Talk to Her….any Pedro Almodovar movie actually….he is awesome….
