Thali refers to a plate of food, in Hindi and a few other Indian languages. Depending on the region in India talked about, the thali could contain rice, chapatis, dal, a couple of vegetable sabzis, pickle, yogurt, etc. These days, we eat far simpler food. Not for us the multiple bowls and repeat servings – instead, we cook either rice or chapatis. A bowl of dal and a serving of vegetable sabzi completes the picture.
Here is the platter from lunch today.
Clockwise – Moong Dal, Cauliflower-Potato Sabzi, Cucumber slices sprinkled with Jiralu Masala, chopped fresh ginger with salt and lemon juice, sweet gooseberry pickle (or relish, as you might like to call it), Cilantro-Mint-Green Chilli Chutney.
What is missing is a couple of servings of brown rice. But there was no space remaining on the plate!

Not raw exactly. Chopped and sprinkled with salt, kept for a little while. It gains some sweetness in taste, and stimulates the digestive juices.
