The no-fuss orange cake!

If you are like me (prefers her desserts eggless, and with as less added sugar as possible), here is a simple cake recipe. No-fuss, tastes great and is a hit with the little ones… 🙂

Prep Time: approx. 30 Minutes.
Cook Time: approx. 30 Minutes.
Ready in: approx. 1 Hour 10 Minutes.
Makes 1 – 9×13 inch pan (16 servings).

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 (14 ounce) can sweetened condensed milk
1 cup orange juice
2 teaspoons vanilla extract
1 cup melted unsalted butter

Directions:
1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
2 Sift together the flour, baking powder and baking Soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3 Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

I baked this for my YES! follow up session this Saturday and was pleasantly surprised when Vamsi came up and asked me, “Did you make this? It is really good!” Most of these kids ingest so much sugar that I hardly expected them to like this one… but they did!
